With a strong farming background including crop and wine production, we have made the natural transition to making cheese. We love the artistry of making cheese by hand - the production process is very satisfying and we are proud to share our skill and our product with everyone.

TRADITIONAL METHODS

Cheesemakers of today have access to many modern techniques and much equipment. Small batch cheesemakers show respect to the traditions established over thousands of years by using their hands to develop an individual feel for the product. It is this technique which provides the difference to our handmade artisan cheese.

MILK SOURCE

We are fortunate to be able to use local milk from suppliers such as Little Big Dairy Co, a family run dairy in Dubbo, NSW. Their generations of farming experience have allowed them to create high quality, reliable produce all year long. Their milk can be in the paddock on Sunday evening and well on the way to becoming cheese on Monday morning.

OPERATED IN MUDGEE

Our boutique factory, powered by renewable energy, is located on the outskirts of the beautiful township of Mudgee, employing locals who share our passion for cheesemaking. Mudgee has an abundance of local produce on offer and is a must-stop destination for lovers of exceptional cheese, food and wine.
