WHAT IS CILIEGINE?
Ciliegine, Italian for 'cherry', are small mozzarella cheeses made in the traditional pasta filata manner with whole cow's milk. They have a semi-soft consistency with a high liquid content, similar to that of fior di latte, and are known for their mild, unripened flavour. These cheeses are generally around the size of a large cherry.
